    "Hong Kong to the World" is a series of four 1-hour documentaries co-produced by RTHK and the National Geographic Channel for the very first time. Local talents would be given an opportunity to showcase their creativity in the production. The genuine local features of the city have been revealed in the local culture instead of merely capturing some commonplace stories.

    Behind every kind of roast meat, there is a secret technique.
    Behind every secret technique, there is a great master.
    Behind every great master, there is a story about Hong Kong.
    And behind every story about Hong Kong, there flows the unique and incomparable “Hong Kong spirit” that defines the city.

    “Char Siu”or barbecued pork, “siu mei” or roast meats, and roast goose – these inimitable Hongkong-style roasts are known everywhere as the staples of any Chinatown restaurant, and contribute to Hong Kong’s worldwide fame just as much as kung fu.
    But what connection is there between “siu mei” and kung fu? It seems that both are the result of long years of sweat and tears, resulting from a determination to attain perfection, and representing Hong Kong people’s indomitable spirit to struggle to be the best in their endeavor.

    In the program “Siu Mei Kung Fu”, we invite the famous Hong Kong movie star, Eric Tsang to enter into the unfamiliar territory of a traditional roasting workshop.
    Starting from the most basic roasting techniques, we will reveal the secrets and stories behind the delicious Hongkong-style roasts.

    In the program, we will reference various hand-to-hand fighting techniques from Chinese kung fu, as well as sword, saber and other weapon styles, as analogies for the culinary “kung fu” that underlies roast meats. Only those time-honored techniques which have been tested in furnace fires, balancing yin and yang and involving god-like blade skills, are worthy to be considered “siu mei kung fu”!

    For the first time ever, we will reveal to audiences various jealously-guarded secret techniques in the four classic types of roasting: barbecued pork, roast goose, roast pork, and roast suckling pig.

    We will visit the oldest “underground oven” workshop still in existence in Hong Kong – Wing Hing Yee Kee which is over 100 years old, situated in Tuen Mun in the New Territories, to witness the most primitive and authentic pig-roasting process. Another old establishment situated in the Central district, Yung Kee built its business on its renowned roast goose. For 60 years, each roast goose made every day has strictly adhered to the same exacting requirements. Every ingredient, and every little detail and technique, must measure up to the highest standard. Eighty-year-old So Hing, the proprietor of Golden China Restaurant brought his authentic roast meat kung fu down from Guangzhou to Hong Kong more than 40 years ago to find his fortune, and of all the roast meats to be found in the city today, Grandmaster So’s “char siu” is acknowledged as the pinnacle of the craft. Red Seasons Restaurant is home to an unforgettable grandmaster of suckling pig-roasting – Master Yuen. Because roast suckling pig is best eaten when the crackling is still warm, once the pig has finished roasting, the entire process of cutting it up and delivering it to diner’s table must not exceed 25 minutes. The harsh environment in old-style roasting workshops simply involves too much hardship to attract the younger generation. The craft of roasting is in dire need of a revolution. Chan Wing-on, the founder of Tai Hing , may just be the man to bring such a game-changing revolution to Hong Kong’s roast meat industry.

    This Seven-a-Side international tournament is without a doubt the most spectacular, exotic, best organized Rugby competition of its kind in the world, and it has consistently produced the highest standard of Sevens Rugby seen anywhere.
    Attracting a crowd of 100,000 over two and a half days, many of whom fly in from around the world, the Hong Kong Sevens is an exercise in logistics and planning to ensure the success of one of the world’s premier sporting events. Other cities host international Sevens tournaments, but nowhere else has mustered quite the same magical blend of location, passion, sophistication, tradition, and internationalization that has driven the success of this event.

    More than two dozen men’s and women’s teams converge on Hong Kong, and getting several hundred rugby players and their equipment to the stadium on time is a massive undertaking. On arrival, these players need places to train -- and in a city of just over one thousand square kilometers, space is at a premium. They also have to be accommodated and fed, no easy task given the sheer physical size of many of these athletes, as well as their finely-tuned training regimens.
    Teams of physiotherapists, nutritionists and coaching staff are also on hand to make sure the players are ready for the physical battles ahead. The Hong Kong Stadium pitch has to be readied for the onslaught of the Sevens. And finally, the fans are almost as important to the weekend’s festivities as are the players.

    Entering its 36th year, it is an international competition that brings out the character of the participants by pitting small against big countries in a way that few other tournaments do. The IRB and the HKRFU have given APV exclusive access to record the operations and logistics that make the Sevens the leading event of its type in the world.

    The film will be driven by three main components: the teams, the fans and the organizers.

    By following the English and Hong Kong teams, the doctors and organizers, we reveal the passion, dedication and discipline it takes to stage such a major sporting event. Our characters include the captains and coaches of both these teams; the lead emergency doctor; the stadium manager; and a group of ‘fancy dress’ fans.

    Our story is confined to the weeks preceding the event and the three days of the event itself. This structure gives the film a natural beginning, middle and end, and allows the built-in drama of competition to reveal itself. Will the event be a success and live up to its reputation? Will the local favorites succeed or fail? Will the doctors and therapists confront any challenges out of the norm?

    “Falling through the Ropes” will explore the personal stories of juvenile delinquents in Hong Kong and the choices they are given in a police sponsored program called, “Operation Breakthrough.”

    Using personal and dramatic first hand accounts, we will reveal the effects of juvenile crime and how the Hong Kong Police Boxing Club has set up a resourceful means of turning these potential criminals towards the right path.

    In partnership with the Hong Kong Police, the Boxing Club is helping to fight crime and juvenile delinquency amongst low income and immigrant communities by giving these youths an outlet to focus their restless energy.

    Operation Breakthrough aims to help youngsters from disadvantaged backgrounds whose families provide little or no support. They have either been arrested by the police for minor offenses, or have been identified by schools or social workers as being at-risk.

    We will highlight the story of 3 teenagers and show how they became at-risk youths who turned to the Police Boxing Club for rehabilitation. We will follow them as they choose the path they will ultimately take, be it holding down a respectable job or fall back to the streets. Will they succeed or fail? Will they live their dreams or turn to the road of self-destruction? Will this be a turning point in their lives? Will they become a valued member of society or a menace to society?

    In 2011, cancer is the world’s most lethal disease, causing more deaths than AIDS, malaria and tuberculosis combined. Cancer is a very real threat for all of us. The latest statistics of 2009 show that 1 in 5 people in Hong Kong are likely to have accumulative risk of developing cancer during life time. Female of age 20 to 44 has higher risk in having cancer than male.
    CANCER & THE CITY (C&TC) focuses on the moving story of Rae Leung, a 35-year-old Chinese Australian who works and lives in Hong Kong, and who suffers from an as-yet incurable type of cancer. Rae was diagnosed with cancer at the tender age of 31, but her optimistic and irreverent attitude in the face of adversity is inspirational to her friends and fellow patients alike. With a typical life expectancy of only a few months, Rae fights to win her battle.

    C&TC follows Rae’s progress through her current sessions of chemotherapy and her subsequent quest for an answer as to why she developed cancer, and whether she can, against all odds, discover a cure through alternative therapies. As she celebrates triumphs and suffers setbacks, pain and disappointment, she begins to develop a new outlook on life and shares changes in her experience of the world, and how important it is to seize each day and live it to its fullest.

    Along the way, she meets other young adults suffering from the disease. Glimpses into their unique lives are proof that cancer does not discriminate, but at the heart of the all their stories is courage and spirit. With the help of renowned medical, holistic and traditional Chinese medicine doctors, Rae explores the potential causes for the rise in cancer rates in Hong Kong and investigates why people are getting cancer at a younger age.

    C&TC journeys across the world from Asia to the United States and back again, consulting experts in oncology as well as specialists of a variety of treatments aimed at physical, mental and emotional wellbeing to gain an understanding of this powerful and prolific disease. It investigates how we got to this point, how to deal with our current situation and the essential preventative steps that must be taken to stop the current trend before things get even worse.

    C&TC also examines the threats to our health that living in Hong Kong can present on a daily basis, such as the prevalence of environmental pollution, domestic pollution in the form of hidden household toxins or common toiletries, poor nutrition and diet, as well as the high levels of stress that characterize modern life. Lifestyle is a significant factor in the development of many cancer cases, and the amount of strain and toxins we subject our bodies to can highly contribute to the likelihood of developing cancer.

    In the pressing search for a cure, Rae explores the pros and cons of alternative approaches to curing cancer such as bioresonance therapy, reiki and nutritional therapies. As the physical strain on the disease takes its toll, Rae also begins to experiment with methods of self healing to cope with the mental stress of her ordeal.

    C&TC speaks to Rae’s support system – a close network of family and friends – who candidly divulges their thoughts, hopes and fears. Sometimes at odds with those around her on how to treat her cancer, Rae must choose how to best move forward with her fight.

    A soul-searching and provocative story, C&TC is a call to all audiences to lead healthier and more fulfilled lives.

    Episode 03: 繩圈內外
    深入探討「奮進行動」如何透過運動將青少年納入正軌。 「奮進行動」由警察義工聯同社工及其他機構合辦各類體育活動, 包括拳擊, 足球, 舞蹈及欖球等。行動特別為邊緣青少年推行, 他們部份是跟警察接觸, 或由學校或社工識別為易受不良影響的青少年。

    警察拳擊會是「奮進行動」的一部份, 透過拳擊讓青少年發洩無窮精力, 協助他們建立正確的價值觀。高級警司BJ是拳擊會主席亦是「鐵面教練」,與邊緣少年的關係是亦師亦友,他與一班拳擊會義工,透過拳擊訓練和曾經誤入歧途的青少年建立關係。繩圈外這班青少年本來是沒有紀律,無所事事的少年,透過繩圈內─ 拳擊這種運動,他們逐漸遵守紀律,而最重要是有機會建立自信、目標並踏上人生正途。

    《繩圈內外》跟進幾個青少年的故事,從邊緣少年到轉投警察拳擊會尋求重生。他們最終的選擇是找到一份理想的職業還是流落街頭? 會成功還是失敗? 實現夢想還是步向滅亡? 這將會是他們生命中的轉捩嗎? 繩圈內外,生命會否從此不一樣。

    Episode 04: 生機再現
    2011年癌症是全球甚至是本港最致命的疾病,患病致死的人數甚至高於愛滋病、瘧疾及肺結核病人數目的總和。癌症對我們所有人來說是一個實實在在的威脅。單看數字,每4名港人便有1人在其一生中曾患癌症。每年,癌症併發率上升2-3%,癌症患者越見年輕化,但成因無從稽考。
    《生機再現》訴說一個感人故事,35歲的梁卉瀚是一名在香港工作和生活的華裔澳洲人,她被診斷患有不可醫治的癌症。31歲,她被診斷患癌,但仍然積極樂觀,而她面對逆境時不退縮的態度,大大激勵了她的朋友和病友。
    本節目會追蹤梁卉瀚的最新化療進度,探求患癌的因由,梁能否克服癌症治療的難關,在種種療程中找到生機。在患病過程中梁與年青病患者傾談。在接受各種西醫藥、傳統中醫術治療下,梁嘗試探討港人患癌率上升的潛在原因。
    節目亦會探討城市生活,例如環境污染,對我們健康構成的威脅。
    《生機再現》不僅是一個抗癌鬥士的故事,亦同時希望喚起大家要活得健康而美滿的重要。

The Hong Kong Stadium pitch has to be readied for the onslaught of the Sevens. And finally, the fans are almost as important to the weekend’s festivities as are the players.

    Entering its 36th year, it is an international competition that brings out the character of the participants by pitting small against big countries in a way that few other tournaments do. The IRB and the HKRFU have given APV exclusive access to record the operations and logistics that make the Sevens the leading event of its type in the world.

    The film will be driven by three main components: the teams, the fans and the organizers.

    By following the English and Hong Kong teams, the doctors and organizers, we reveal the passion, dedication and discipline it takes to stage such a major sporting event. Our characters include the captains and coaches of both these teams; the lead emergency doctor; the stadium manager; and a group of ‘fancy dress’ fans.

    Our story is confined to the weeks preceding the event and the three days of the event itself. This structure gives the film a natural beginning, middle and end, and allows the built-in drama of competition to reveal itself. Will the event be a success and live up to its reputation? Will the local favorites succeed or fail? Will the doctors and therapists confront any challenges out of the norm?

    “Falling through the Ropes” will explore the personal stories of juvenile delinquents in Hong Kong and the choices they are given in a police sponsored program called, “Operation Breakthrough.”

    Using personal and dramatic first hand accounts, we will reveal the effects of juvenile crime and how the Hong Kong Police Boxing Club has set up a resourceful means of turning these potential criminals towards the right path.

    In partnership with the Hong Kong Police, the Boxing Club is helping to fight crime and juvenile delinquency amongst low income and immigrant communities by giving these youths an outlet to focus their restless energy.

    Operation Breakthrough aims to help youngsters from disadvantaged backgrounds whose families provide little or no support. They have either been arrested by the police for minor offenses, or have been identified by schools or social workers as being at-risk.

    We will highlight the story of 3 teenagers and show how they became at-risk youths who turned to the Police Boxing Club for rehabilitation. We will follow them as they choose the path they will ultimately take, be it holding down a respectable job or fall back to the streets. Will they succeed or fail? Will they live their dreams or turn to the road of self-destruction? Will this be a turning point in their lives? Will they become a valued member of society or a menace to society?

    In 2011, cancer is the world’s most lethal disease, causing more deaths than AIDS, malaria and tuberculosis combined. Cancer is a very real threat for all of us. The latest statistics of 2009 show that 1 in 5 people in Hong Kong are likely to have accumulative risk of developing cancer during life time. Female of age 20 to 44 has higher risk in having cancer than male.
    CANCER & THE CITY (C&TC) focuses on the moving story of Rae Leung, a 35-year-old Chinese Australian who works and lives in Hong Kong, and who suffers from an as-yet incurable type of cancer. Rae was diagnosed with cancer at the tender age of 31, but her optimistic and irreverent attitude in the face of adversity is inspirational to her friends and fellow patients alike. With a typical life expectancy of only a few months, Rae fights to win her battle.

    C&TC follows Rae’s progress through her current sessions of chemotherapy and her subsequent quest for an answer as to why she developed cancer, and whether she can, against all odds, discover a cure through alternative therapies. As she celebrates triumphs and suffers setbacks, pain and disappointment, she begins to develop a new outlook on life and shares changes in her experience of the world, and how important it is to seize each day and live it to its fullest.

    Along the way, she meets other young adults suffering from the disease. Glimpses into their unique lives are proof that cancer does not discriminate, but at the heart of the all their stories is courage and spirit. With the help of renowned medical, holistic and traditional Chinese medicine doctors, Rae explores the potential causes for the rise in cancer rates in Hong Kong and investigates why people are getting cancer at a younger age.

    C&TC journeys across the world from Asia to the United States and back again, consulting experts in oncology as well as specialists of a variety of treatments aimed at physical, mental and emotional wellbeing to gain an understanding of this powerful and prolific disease. It investigates how we got to this point, how to deal with our current situation and the essential preventative steps that must be taken to stop the current trend before things get even worse.

    C&TC also examines the threats to our health that living in Hong Kong can present on a daily basis, such as the prevalence of environmental pollution, domestic pollution in the form of hidden household toxins or common toiletries, poor nutrition and diet, as well as the high levels of stress that characterize modern life. Lifestyle is a significant factor in the development of many cancer cases, and the amount of strain and toxins we subject our bodies to can highly contribute to the likelihood of developing cancer.

    In the pressing search for a cure, Rae explores the pros and cons of alternative approaches to curing cancer such as bioresonance therapy, reiki and nutritional therapies. As the physical strain on the disease takes its toll, Rae also begins to experiment with methods of self healing to cope with the mental stress of her ordeal.

    C&TC speaks to Rae’s support system – a close network of family and friends – who candidly divulges their thoughts, hopes and fears. Sometimes at odds with those around her on how to treat her cancer, Rae must choose how to best move forward with her fight.
