When it comes to dress shirts, having which in more percentage is better? Like in terms of upkeep, how comfortable it is, and whatnot. I've worn a few shirts ranging from 60% cotton 40% polyester to 100% cotton, but I can't tell the difference.

polyester has a smooth fabric. As for cotton 100% cotton it is more soft and more fluffy you can say.

That is why a 100% coton poloshirt is soo much more expensive then a polyester one.

Not only because of that, if im correct, cotton is a natural product while polyester is synthetic.

Cotton is better, it feels better, and it breathes better.

Cotton, but in order to keep cotton shirts nice and crisp, a lot of work ensues =_=b I personally like cotton better because I am allergic to SOME polyester shirts... So I tend to avoid polyester shirts altogether.

In really hot countries like SG, HK, I prefer 100% cotton, this will absorb all sweat :D
