ok, so there is this thread posted by POWY in the chinese thread that no one really replied to, but i was so curious to see what people had to say. So i'm posting up a new thread, that is more broad. I'll also post this thread in the other Japanese, Korean, and Chinese sides So everyone, let's post recipes lets so far out please no American adaption cuisine, unless you want to make people barf and lets limit on the requests, how bout this you can only request a dish, only if you post a recipe first sounds fair right?
ok lets see what to make oh spring rolls sorry i dont know to much about vietnamese cuisine expect for pho ha ha ha ok spring rolls ingrediants dried rice paper shrimp or bbq pork (sliced) carrots (cut in to really thin strips) rice vermicelli sauce ingrediants hosin sauce peanut butter directions: put the rice paper under warm water for a few seconds then place it on a plate wait another 30 seconds for it to soak the water (if you leave it in the warm water too long, it might get to soft, which will make it rip very easily) than load on some rice vermicelli than a few strips of carrots and then line up some of the meat on top than wrap it exactly the way you would wrap a burrito dont forget to do it very tightly (this takes practice) the sauce is quite easy, just mix the two together, use whatever ratios you find most tasty i like using chunky peanut butter, but not everyone does
Skewered Grill Pork Balls [Nem Nu'o'ng] Ingredients: 1kg-----Leg or Shoulder Pork Meat. 100g----Pork Fat (Optional) 6 Cloves of garlic, chopped 1Tsp----Salt [Tsp=teaspoon] 1/2Tsp--Baking Powder. 1Tbsp---Rum or Anise. [Tbsp=tablespoon] 1Tbsp---Ground Roasted Rice. 3Tbsps--Sugar. [Optional] Cut pork fat into matchstick strips and mix with 2 tablespoons of sugar. Let it stand for 1 hour. Cut meat into 3cm cubes and mix them with garlic, rum (or anisette), 1 teaspoon of salt and 1 tablespoon of sugar. Put mixture in a plastic bag, tie it, and place in the freezer compartment of the refrigerator for 30 minutes. Turn the bag over every 10 minutes to stop meat from hardening. Take meat out of plastic bag and mince finely in a food processor, about 200g at a time. When he meat changes to a pale whitish color, remove it from the food processor. Repeat the process until done. Mix the minced meat with baking powder, ground roasted rice [and pork fat]. After thourough mixing, roll mixture into balls about the size of a large cherry. Thread balls on skewers and grill over a charcoal fire or under the griller until golden. These meat balls are served with a special bean sauce as follow: 100g-----Shelled Mung Beans or Yellow Split Peas. 1/2 Cup--Water. 1/2 Cup--Refined Bean Sauce. 1 Clove---Garlic, Chopped. 1 Tbsp----Oil. 2 Tbsps---Sugar. 2 Tbsps---Vinegar. 1 Tsp-----Good Quality Fish Sauce. 50g-------Chopped Roasted Peanuts Cook mung beans or split peas in 2 cup of water until soft then drain and mince well in a food processor to a fine paste. Heat oil over a moderate heat in a saucepan, add garlic. Fry until slightly golden, then add bean sauce and mung beans paste. Mix well, add vinegar, sugar, 1/2 cup of water, fish sauce, then mix well. This sauce should be slightly sweet and not too thin or too thick. (If the mixture is too thick, add more water and stir well over moderate heat). How to serve: You will need some rice papers (slightly wetted with warm water), some lettuce, cucumber slices and mint leaves. Place these items on separate plates and then on the table. Pour the sauce into individual bowls, Sprinkle chopped peanuts on top before serving. Place one or two pieces of rice paper on a plate. Put some lettuce, cucumber and mint on rice paper. Finally, place 1 or 2 meat balls on top. Tuck in the end of rice paper as an envelope and roll it up. Dip roll in bowl of bean sauce. A dash of chilli sauce in the bean sauce would give a lift to the flavour. I hope you will enjoy this recipe...Have A Nice Day!
