It can be said easy/hard. Try to google it to suit the program ur using to create ur DVD. I also made a rough guide if u a glace of how i make mine http://www.dramasian.com/showthread.php?t=10614
For Normal playing: I use VLC player. u can just select which sub u want in video tab. For DVDS: I had that problem at the start aswell. The problem was: the english sub is actualy a sub file. Meaning that in the dvd player it says Subtitle 1 or 2, 1 is in chinese and 2 in english. The result is to open both files in VOB sub (google VOB sub-free program), then resave it into another folder, so it won't miss match. U need to have the subtitle same as the file name, inorder for programs to read it. I prefer to use Adobe Encore to do sub matchs, cause u can add more then 1+ subtitles. Just the hecktic time i took to learn the program. xD
