hey che che, i did what you told for the cantonese option and it is not available on MPC. Once i click navigate, language is not really applicable to click. =/
When you play the video, you will see 2 icons in the bottom to right. Right-click the green arrow icon (DirectVobSub) or the white icon (Haali Media Splitter) to choose language and subtitles (if there are subtitles)
MPC to change audio = right click on the screen ----> audio ----> then choose the language you want to hear.
Not on MPC but in the bottom right corner where you can see different icons. Actually, I can't choose language in MPC, but it's probably due to I am using ffdshow codec for video/audio. So, I think you are using same or other codecs like me. You can try Jetaudio player (free), which let you to choose language and this player is actually good
